German Potato Pancakes can be sweet or savory, it all depends on the toppings used on them. Personally, I like brown sugar, my father would douse them with milk and add sugar, others prefer syrup. They can also be served with Applesauce or meat.


            Can I make these ahead of time?

These could be made ahead of time, but when reheated will become even more crispy, which may be too much for some people. I prefer to make them just before serving so they are crispy, yet tender and flavorful.


            Can I use frozen hashbrowns?

This is going to change the German Pancakes a slight bit. First you would have to thaw the hash browns, then place them in a towel to twist the water out. The easiest way to do this recipe is to freshly grate the potatoes and drain or twist the liquid. The German Potato Pancakes will taste best when using fresh ingredients.

How to make German Potato Pancakes


FIRST STEP:

After grating the potatoes, be sure to drain off all liquid. This is done by using your hands and a colander or placing the potatoes in a towel and wringing the liquid out.

Place the potatoes in a medium sized bowl and add the flour, onion, eggs and salt

Stir to combine well

SECOND STEP:

Heat a skillet with a neutral flavored oil over medium to medium high heat

Using a measuring cup or ladle, place approximately ⅓ cup of batter for each cake in the heated oil. If needed, flatten with the back of a spoon

THIRD STEP:

Fry on each side until golden brown and crispy, place on paper towel to drain excess grease
